The Analysis of the Compositions of Potatoes and the Nutritional Effects of Potato Diets on the Albino Rats


Abstract
As a part of the efforts to make it possible that the potatoes cap. be served as a main food, the compositions of the three species of potatoes, Nam-jak, Do-won, De-ji, and their nutritional effects on albino rats were studied. Analysis of compositions of potatoes such as protein, total lipid, Ash, Calcium, Sodium, Potassium, amino acids, etc. was undertaken and in order to study their nutritional effect on rats, the changes of the body weights and the weights of several organs and the amounts of diet intakes of the rats, etc. were observed from each of the feeding groups, one feeded on only potatoes.
After the above observations, following results was obtained.
1. The amounts of proteins of the potatoes were in the range of 2.2-3.3 g/100gl, and among them Nam-jak contained the highest level, and the amounts of amino acids also were highest in Nam-jak.
2. The range of the amount, of minerals was 1.0-1.13 g/100g of potatoes, that of calcium was 11.33-16.65mg/100g, most in De-ji, and sodium 117.2-166.9mg/100g, potassium 185.3-247. 9mg/10Cg, and also most in De-ji.
3. The group feeded only on potatoes showed the significant decrase of body weights. As for the organs the weight of liver was decreased in the group feeded on only potatoes. The amount of diet intake was 23-27 g/day/rat at the beginning of tl.e feeding period, and since then it was increased to 34-40g.
